French vanilla ice cream with chunky chocolate brownie sauce

Ingredients

  • For the French vanilla ice cream:
  • 8 large free-range eggs
  • 600 g demerara sugar
  • 8 cups low-fat whipping cream
  • 4 cups low-fat milk
  • 6 t vanilla extract
  • 2 vanilla pods, split and seeds scraped
  • 5 chocolate brownies, broken into chunks
  • 200 g Nutella chocolate spread, slightly melted

Cooking Instructions

To make the French vanilla ice cream, whisk the eggs until light and fluffy.

Whisk in the sugar, a little at a time, and continue whisking until completely blended.

Add the cream, milk and vanilla extract and seeds and whisk to blend.

Churn in an ice cream-maker according to the manufacturers instructions.

Remove from the freezer 5 minutes before serving.

Divide the brownie chunks among four bowls.

Top with scoops of French vanilla ice cream and a generous coating of melted Nutella.
