Ingredients

  • 1 T butter
  • 2 T flour
  • ½ cup beer
  • ½ cup mature Cheddar cheese, grated
  • 2 t hot English mustard
  • sea salt and freshly ground black pepper, to taste
  • 1 x 6-pack Woolworths syrup waffles
  • 6 slices smoked ham
  • 50 g Swiss chard, wilted

Cooking Instructions

Melt the butter in a saucepan over a medium heat. Add the flour and stir to form a roux. Cook for 1 minute. Slowly add the beer while whisking, then cook until the sauce has thickened. Add the grated cheese and mustard and whisk until melted. Season to taste.

Place the waffles on a baking tray and top with the ham, Swiss chard and cheese sauce. Grill until
golden brown.

Cook's note: The buttery, cheesy goodness of traditional Welsh rarebit meets the spongy sweetness of ready-made waffles in this quick-sticks Sunday supper mash-up. Use nonalcoholic beer if you like.
