1 baked potato, 3 ways

There’s nothing easier than baking a potato (or four) on nights when you must answer the call of the carb. Try these toppings and you won’t even miss the steak.

THE BASE

Rub 4 potatoes or sweet potatoes with olive oil and sea salt and bake at 180°C until soft.

Potato skin crisps up beautifully when baked with salt, while sweet potatoes caramelise and turn deliciously sticky and golden.

1. MEXICAN BAKED POTATOES

Chargrill 2 cooked cobs sweetcorn in a hot pan until scorched. Cut the kernels off the cobs, sprinkle onto hot baked potatoes with 2 sliced spring onions, fresh mint and chopped tomato.

Heat 1 T olive oil and add a pinch of paprika. Season the potato and drizzle with the paprika oil to serve.

2. CLASSIC COMFORT BAKED POTATOES

Snip 5 g fresh chives over a baked potato and top with 250 g crumbled crispy streaky bacon rashers and a dollop of crème fraîche.

3. TANDOORI BUTTER BAKED POTATOES

Grate 1 x 5 cm piece peeled fresh ginger and 1 garlic clove into 100 g softened butter. Add the zest of 1 lemon, 1 t paprika and 2 t garam masala and mix. Serve on hot baked sweet potatoes with fresh coriander.
