1 slice of toast, 3 ways

We could wax lyrical about inspired toast toppings, but these are our favourites right now.

THE BASE
Toast your preferred bread until golden brown and crunchy on the outside and soft on the inside.
Spread with butter immediately and add your topping.

CLASSIC AVOCADO ON TOAST WITH SWEET BALSAMIC TOMATO
Place 50 g Rosa tomatoes in a hot pan with 1 T olive oil and season to taste. Toss until the tomatoes start to blister. Slice ½ ripe avocado onto a slice of toast, top with the hot tomatoes and a drizzle of balsamic crème, fresh basil and season to taste.

CRUSHED PEAS, POACHED EGG AND CHILLI
Place 30 g crushed blanched peas into a pan with a drizzle of olive oil, ½ sliced fresh chilli and a squeeze of lemon juice. Cook for 4 minutes. Spoon onto a slice of toast, top with a soft-poached egg and season.

NUTELLA, CITRUS AND FLAKED ALMONDS
Spread a generous dollop of Nutella or Woolworths macadamia or almond butter onto a slice of toast. Top with half a segmented satsuma or orange and scatter with toasted flaked almonds. Serve immediately.
