17 desserts to make if you love custard

It’s the simple pleasures in life that really matter.

To make vanilla custard

Scald 200 ml milk over a high heat. Cream 2 free-range egg yolks, 30 g white sugar and 1 ml vanilla extract. Whisk a little bit of the warm milk into the egg mixture. Add the remaining milk to the eggs and whisk. Transfer to a clean saucepan, return to the heat and cook until it reaches the right consistency, stirring continually.

To make chocolate custard

Place 1 cup milk and 1 cup cream in a saucepan and bring to the boil. Remove from the heat. Mix 1 t vanilla extract, 6 free-range egg yolks, 100 g caster sugar and 1½ T good-quality cocoa powder in a bowl, then slowly pour into the cream-and-milk mixture, stirring continually. Place the saucepan over a low heat and cook, stirring, until the custard thickens. Pour the custard into a large bowl, cover with clingwrap and chill for 2 hours.

Bake it and add orange zest

These custard tarts have an extremely light and delicate texture that contrasts with the richness of the chocolate ganache. Using a blowtorch for a crisp caramel topping, as for crème brûlée, is another great idea. Get the recipe here.
