3 light desserts for Christmas in summer

We always have room for dessert, but when it’s hot outside we’re less inclined to go for heavy, baked puddings. After all, many of the traditional Christmas desserts have their origins in countries where Christmas falls in mid-winter. Here are three of our favourite desserts for Christmas in the southern hemisphere.

Baked nectarines and peaches with ice cream

‘Tis the season of stone fruit! Level up your fruit and ice-cream offerings with this four-ingredient recipe by Mogau Seshoene, a.k.a. The Lazy Makoti. She uses an interesting secret ingredient to enhance the flavour of the peaches: balsamic vinegar!

Low-effort lemon parfait

As the name suggests, you don’t need lots of elbow grease to make this parfait, but we guarantee your guests will be impressed that you made it from scratch.

Pavlova trifle

Not in the mood to make a full-on trifle? This pavlova trifle takes its inspiration from an Eton mess, swapping boozy cake and jelly for meringues, berries and stone fruit, making it feel a little lighter than a traditional trifle. Plus, you can cheat a bit and use Woolworths’ cocoa or salted caramel meringues rather than making them yourself.
