Great on their own, sliced and smeared with peanut butter and the ultimate lunchbox treat. But have you tried them in your everyday cooking? Here’s three delicious recipes featuring the JAZZ™ apple. Its sweet, tangy, zesty flavour will take weeknight dinners to the next level.

JAZZY APPLE, FETA AND CRANBERRY SALAD

On a platter arrange 2 thinly sliced JAZZ™ apples, 2 chopped spring onions and 3 large handfuls wild rocket leaves. Toss over with roughly chopped 1/3 cup Pecan nuts, a ¼ cup dried cranberries and ¼ cup of crumbled feta cheese. For the vinegarette, whisk 3 T apple juice, 2 t apple cider vinegar, 1T wholegrain mustard, ¼ cup olive Oil and season to taste with salt and freshly ground black pepper. Drizzle the vinaigrette over the salad and serve immediately. Serves 2

SPICY SOUR JAZZ™ APPLE AND PORK WITH NOODLES

Place 2 T dried Chinese mushrooms in a bowl of boiling water enough to cover the mushrooms, allow them to absorb the water for 20 minutes. Then remove mushrooms from water and pat dry and chop. Meanwhile boil 1 ½ cups Chinese egg noodles for 3 minutes, drain and set aside. In a wok or a large frying pan over high heat and add 2T canola oil oil. Toss in 2 cloves of finely chopped garlic and 1 t of fresh ginger and ½ t crushed red chilli with 1 cored and sliced red pepper, ½ cup baby corn and 4 chopped spring onions. Stir-fry for 30 seconds. Add 1 x 450 g pork fillet, thinly sliced and cook for a further few minutes. Add the mushrooms and 2 large JAZZ™ apples cut into wedges. Stir-fry for 3 minutes and pour over 2 T honey, 2 T soya sauce and 2 T apple cider vinegar and stir. Continue to stir until the noodles are warmed and the vegetables are tender. Serve immediately. Serves 4

WOK-FRIED CHILLI PRAWNS WITH JAZZ™ APPLES

Heat 2 T of oil in wok or frying pan and gently fry 1 small onion, finely chopped for 3 minutes. Turn up heat and add 1 crushed clove of garlic, 2 cups prawns and 1 cup snow peas, cut on a slant. Cook for 4 minutes then add 1 JAZZ™ apple, sliced into wedges and add ½ cup sweet chilli sauce. Simmer for 2 minutes. Serve with steamed rice. Serves 4
