Butternut & broccoli puff pie
Take one sheet of defrosted Woolworths readymade puff pastry and cut out a shape to fit a round baking dish. Fill the dish with a portion of broccoli, butternut & courgette with béchamel, top with the pastry, brush with beaten egg, sprinkle with sesame seeds and bake at 200°C for 25 minutes or until golden.
Roasted veggie phyllo pies
Brush some readymade phyllo pastry sheets with butter. Place on a baking sheet and add a nice scoop of roasted vegetables with pesto in the middle. Top with extra roasted red pepper pesto and fold the pastry closed to form a parcel. Repeat until you have about 6 parcels, then brush again with melted butter and bake at 200°C for 20 minutes until golden.
Butternut & spinach pot pies
Take one sheet of defrosted Woolworths readymade puff pastry and cut out circles to fit into the bottom of a muffin pan. Fill each muffin hole with a combination of readymade butternut & creamed spinach, fried bacon strips and a dusting of paprika. Top with pastry lids, brush with beaten egg, prick with a knife (to allow the air to escape while baking), add a sprig of fresh thyme and bake at at 200°C for 20 minutes until golden.
