3 ways with green beans

Sure, we’re happy with a knob of butter and some grated nutmeg, but these magic legumes have many more strings to their bow. Add these to your cooking repertoire.

The satisfying side: Steamed green beans and garlicky olives

Steam 250 g fresh green beans until tender and bright green in colour. Drain. Heat a drizzle of olive oil in a pan over a medium to low heat and gently fry 2 thinly sliced cloves garlic until fragrant. Add 1⁄2 cup smashed mixed olives and fry for a further few minutes. Remove from the heat, add the beans and toss. Serve warm as an easy side dish.

THE PARTY SNACK: TEMPURA GREEN BEANS

Mix 200 g Woolworths tempura flour with 1 cup ice-cold water until smooth. Dip 400 g green beans into the batter, then deep-fry in batches in 2 cups hot vegetable oil for a couple of minutes. Drain on kitchen paper and serve hot with garlic mayonnaise.

THE QUICK SUPPER: NIÇOISE SALAD

Fry 200 g diced pork rashers until crisp. Toss with 100 g baby spinach, 50 g cooked green beans, 200 g cooked baby potatoes and 1 x 170 g can drained tuna. Dress with olive oil and lemon juice, season and top with 4 soft-boiled eggs.
