January might be over but that doesn’t mean we’re all feeling flush with cash. Whether you’re on a budget or just looking for cheaper midweek dinners (that don’t skimp on flavour), we’ve got five recipes for you.

Chicken liver burritos

Aside from their value, chicken livers deliver masses of flavour in a short cooking time making them a perfect midweek winner. And if you’re looking for something new to do with livers, look no further than these burritos. Feel free to use any veggies you’ve got on hand.

Spanakorizo

While this might sound very fancy, it’s essentially Swiss chard (or spinach or kale) simmered with rice and stock. Serve it as is, or alongside grilled chicken or fish for an easy dinner.

Citrus chicken with chimichurri

Chimichurri on a budget might sound near impossible, but you don’t have to follow the recipe exactly. Use any soft herbs you have in the fridge (parsley, basil and dill will all work), as well as any vinegar or even lemon juice.

Chargrilled chipotle chicken

Proof that chicken breasts don’t have to boring if you smother them a punchy sauce and chargrill them. Again, play around with whatever you’ve got at home. Swap the chilli sauce for barbeque, sriracha or even sweet chilli.

Baked sweet potato bowls

Baked sweet potatoes will always be an excellent dinner option, but this recipe takes things to the next level. If the idea of plant-based mince doesn’t appeal to you, use a can of beans instead – they’ll work just as well.
