5 Mexican recipes that aren’t tacos

While we’ll always have a soft spot for tacos, here are some of our other favourite Mexican recipes we think you should try. From chilaquiles to pozole and the best spicy tomato sauce, these Mexican recipes belong in your family recipe flip-file.

1. Chilaquiles

While technically a breakfast dish in Mexico, this fried tortilla recipe would also be an excellent quick dinner option. Lightly fried tortillas are cooked in a spicy tomato sauce. Delicious with a fried egg – or add mince or shredded chicken for a meatier option.

2. Mexican tortilla soup

Tortilla soup, or sopa azteca, is a spicy combo of chicken, black beans, crème fraîche and crunchy tortilla strips. If you've got a can of black beans in the pantry, you're halfway to having this satisfying soup for dinner. Place all the garnishes and crispy tortillas on the table and let everyone assemble their own finished product.

3. Tostadas

Tostadas refer to crispy, fried tortillas, which are then topped with a wide range of delicious things. Here they're topped with black beans, but you could use any meat or fish you like.

4. Salsa roja

Master salsa roja – red sauce – and you've got the perfect spicy tomato for all eventualities. It'll keep in a jar in the fridge for 7 days, and you can serve it with tacos, enchiladas, tortilla chips – or even slather it liberally over fried eggs.

5. Pozole

This simple, spiced, tomato-based stew is perfect for when you need something new to do with that can of tomatoes. Add beef or chicken as you like.
