5 recipes to cook this weekend and stash for the week ahead

Use any spare time this weekend to get yourself sorted for the week ahead. These easy recipes can be made ahead and stored until you need them.

Chicken butter masala

Omit the paneer, if you don't have it (or make your own here with your choice of milk) but keep everything else as is. This not only doubles well, but can be frozen for future dinners – and even improves in flavour.

Herbed tomato mince with cheesy polenta

This lighter take on Bolognese is a surefire crowdpleaser and it freezes well if you choose to make it in bulk. Serve with the suggested polenta or on your choice of pasta or even on toast topped with a fried egg for an indulgent breakfast-for-dinner set up.

Everyday egg frittatas

These endlessly riffable egg tarts allow you to mix and match your flavour combinations. They'll keep in the fridge for a couple of days, meaning you've got emergency breakfasts, lunches and snacks sorted.

There's something incredibly therapeutic about making your own chicken soup from scratch, and if you've got a carcass hiding out in the freezer, this forward-planning recipe becomes a thrifty one, too. Change up the toppings on the final soup if you like, including subbing noodles for the pasta.

Baked chicken-and-oreganum meatballs

If you're looking to make these ahead, allow to cool once cooked through and pop in the freezer. When you're ready to serve, reheat everything from frozen and then top with the mozzarella to let it get all melty. If you're so inclined, swap the chicken mince out for beef or even pork mince squeezed out of sausages if that's what you have on hand.
