Use any spare time this weekend to get yourself sorted for the week ahead. These easy recipes can be made ahead and stored until you need them.

Omit the paneer, if you don’t have it (or make your own here with your choice of milk) but keep everything else as is. This not only doubles well, but can be frozen for future dinners – and even improves in flavour.

If you’re looking to make these ahead, allow to cool once cooked through and pop in the freezer. When you’re ready to serve, reheat everything from frozen and then top with the mozzarella to let it get all melty. If you’re so inclined, swap the chicken mince out for beef or even pork mince squeezed out of sausages if that’s what you have on hand.
