5 ways to use leftover coconut milk and cream

When the recipe calls for a quarter cup and you don’t know what to do with the rest, store it in a covered bowl or sealed jar in the fridge for a day or two until you’re ready to try these ideas.

1. Add a splash to eggs while scrambling them.
Try: Scrambled sweetcorn

2. Freeze in a Ziploc bag or in ice trays to use in smoothies or curries (or pop a few blocks into your iced coffee).

Try: Pineapple and rolled-oat smoothies.

3. Add a little to oats while you’re cooking it on the stove.

Try: Buttermilk-soaked oats with berries

4. Make a faux white sauce by cooking veggie spaghetti (baby marrow or butternut) in leftover coconut cream.

Try: Chicken in coconut “gravy”

5. Make a Thai-style stir-fry marinade with coconut milk, lime leaves, crushed garlic cloves, sweet chilli sauce and brown sugar.

Try: Trout poached in Thai red coconut curry with lentils.
