6 breakfast-for-dinner recipes to try this spring

Spring is in full swing and we are at level 1 of lockdown. With all this new freedom, you don’t want to spend hours in the kitchen making dinner. No, you want to have some (responsible, socially distanced) fun. So why not have a classic, breakfast-for-dinner night? Not only are lighter meals better for warmer weather (extra space for ice cream!), you’ll spend less time in the kitchen and more time on the things you want to do. We’ve rounded up six breakfast recipes that will make great dinners. Choose your favourite, or make them all – the choice is yours.

1. Easy folded eggs with asparagus soldiers

Yes, this doesn’t look very filling, but there are things you can do with this combo to make it more substantial for supper. Toast English muffins to make egg burgers and top with griddled free-range, thick-cut burger patties, Cheddar cheese and the folded eggs. Not into folded eggs? Serve the asparagus soldiers with potato röstis. If you want to be fancy, wrap the asparagus with smoked trout instead of Serrano ham.

2. Chilaquiles

In the mood for a Mexican night? Swap nachos for chilaquiles. A traditional Mexican breakfast made with fried quartered corn tortillas in a sauce and topped with fried eggs and salsa, it will definitely hit the spot. Bulk it up by adding mince or shredded chicken.

3. Baked egg keema

Want to use up that mince in your freezer? Use it to make this baked egg keema and serve it with tomato salsa, yoghurt and rotis.

4. Breakfast sausage “pie”

Sausage, leeks, eggs and cheese – but make it a pie! This breakfast pie may look fancy, but it’s super-easy to make. Serve it with salad or some roast veggies.

5. Chakalaka eggs Benedict

This recipe is a little more involved compared to your average breakfast, but it’s so worth it. Home-made boerewors patties topped with a tomato chakalaka ragù and poached eggs? This is basically a next-level breakfast burger. Have fun with it and customise it to your taste.

6. Huevos rancheros egg pie

This recipe really bulks up huevos rancheros by transforming them into a pie made with mashed potato. Serve with nacho chips for a fun twist.
