6 plant-based dinners you'll love

If you’re struggling to add more vegetarian and vegan meals into your weekly rotation, we’ve got you. Eating more plant-based meals is super-easy with Abigail Donnelly’s weeknight inspiration. Plus, she has ideas for adding a bit of meat on the side, if you must…

1. Tofu with 5-minute Romesco sauce

The tofu can be cooked in an air-fryer at 180°C for 10 minutes. Place on grid in a single layer and give the drawer a shake halfway through. Use firm tofu as silken can be too fragile.

Meat addition: If you’re not plant-based, you can bulk up this recipe with Woolies’ stir-fried pork rashers. They’re made from specially selected South African pork belly, cured and oak-smoked for a subtle sweet-smoky flavour.

2. Fresh tomato gnudi

Nutritional yeast is a great substitute for cheese as it has a nutty, cheesy flavour. It’s used here to make this dish plant-based.

Meat addition: Grilled lamb chops are the perfect accompaniment here.

3. Air-fryer falafel

If you don’t have an air-fryer, bake the falafel on a lined baking tray for 20 minutes at 180°C, or fry in hot oil until golden brown.

Meat addition: This recipe works well with leftover roast lamb on the side. or stuffed into a warmed pita with a dollop of Woolworths tzatziki and tahini for a vegetarian option.

4. Cauliflower sorghum risotto

Add Woolies’ plant-powered, dairy-free, Cheddar-flavoured cheese to your shopping list. It’s great for cooking and as a sandwich filler. Plus, it’s the perfect finishing touch for this dish.

Vegetarian addition: As with most risottos, a fried or poached egg would be a great addition.

5. Gochujang brown rice stir-fry

Gochujang paste adds spicy sweetness to sauces, marinades, stews and soups. The ingredient shines in this easy brown rice stir-fry.

Meat addition: This easy dinner is even tastier when you add sliced pan-fried steak.

6. Baby marrow pancake

This recipe is easily customisable. For example, you can add a handful of chopped spinach or kale to the salad, or replace the asparagus with Tenderstem broccoli.

Meat addition: Woolies’ selection of lamb sausages includes rosemary lamb sausage and halaal dhania lamb sausage. Grill your favourite and serve it sliced on the side.
