7 Mexican-inspired recipes to make your week more exciting

2. Pork enchilada

Cheesy, spicy and ready in just 35 minutes, this one is definitely going to be a family favourite. You can change up the protein for more versions that are just as delicious.

3. Adobo nacho tray bake

Nachos for dinner are always going to go down well. This recipe uses a versatile and hearty chilli con carne that is a staple in Abigail's home. Make a double batch of the chilli con carne and freeze half to use for another dinner.

4. Chilaquiles with whipped feta

If you're in the mood for "brinner" (breakfast for dinner), why not switch things up with this traditional Mexican breakfast? Abigail serves it with a flavoured whipped feta, but you can add whatever you like into the mix.

5. Cheese-and-corn quesadilla

This is one of those recipes that require minimal effort but has big results. You just need 15 minutes prep time, but the coriander jalapeño pesto will make it feel like you've been prepping for ages to make something fancy.
