8 mozzarella recipes that prove it’s the ultimate cheese

Everyone knows that if you want the most epic cheese-pull you need to use mozzarella! But this humble cheese is so much more than stretchy. It’s versatile, works with a variety of flavours and is a key ingredient in some of our favourite dishes. To prove mozzarella’s supremacy, we’ve rounded up 8 dishes where the cheese shines best. 1. Broccoli, cheese and potato croquettes

Broccoli-and-potato croquettes are an amazing snack, but when you add mozzarella into the mix they become the stuff of legends. With fried potatoes and melted cheese, how could they not? These are easier to make than you think, thanks to Khanya Mzongwana's easy recipe. They're also a great way to get the veggie-haters in your life to eat some broccoli. Plus, you can deep-fry them from frozen, so be sure to make a big batch and freeze some for when you're feeling snackish, or when loadshedding is approaching.

2. Charred blood orange and mozzarella salad

4. Gnocco fritto

Gnocco fritto is an elite appetiser, but we're here for Abigail Donnelly's baked smoked mozzarella! She bakes the cheese with garlic at 180°C for 15 minutes until it's golden and melted. It's perfect for scooping up with gnocco fritto or bits of crusty bread or veggies – anything you want really.
