9 inspired sweetcorn recipes

The beloved mielie is capable of more than just being boiled and served with butter (although we’ll always love that) so here are some of our favourite ways to cook with corn.

1. Smoky corn with spring onion cream cheese and maple syrup

Mielies done on the braai are a no-brainer, but this takes a classic to a whole new level.

2. Corn chowder

This recipe can be made with fresh corn, but knowing what canned corn is capable of means it's worthwhile keeping a few tins in the pantry.

3. Fried eggs with labneh and corn “ribs”

Just when you thought corn on the cob couldn't be reinvented, this way of preparing it adds a bit of interest and texture.

4. Spicy corn fritters with watermelon salad

This salad is a celebration of summer produce (bonus points if you use fresh, blanched corn, but we won't judge if you don't), but the fritters are just as good served by themselves.

5. Smoky corn soup with cheesy egg toast

Not to be confused with chowder, this soup is smooth and silky and perfect for those end-of-summer mielies. You don't have to make the eggy toast, but we strongly recommend you do.

6. Braaied cornbread

You could absolutely cook this in the oven if you wanted to, but the braai is easier than you think. Use fresh or canned corn here.

8. The ultimate chicken-and-corn pies

While this recipe calls for creamed corn, you could absolutely use fresh corn. Simply boil it, cut off the cob and continue as instructed.
