Lasagne is my ultimate weakness, but it has to be made well! Here are my favourite lasagnes, not all of them are what you expect and most of them take matter of minutes to make! Get excited about lasagne again and give one or all of these a try!

This is a like a cheat’s version of lasagne, all the flavour and half the work! It’s also a fantastic option for the summer months.

Woolworths’ show-stopping ready-made lasagne
As if we needed any excuse to buy Woolworths delicious home-made lasagne! All you need to do is pop it in the oven. I like to char ripe vine tomatoes in a hot pan with 1 T olive oil and pan-fry until the skins start to burst, then add a drizzle of balsamic vinegar, sea salt and freshly ground black pepper and a handful of basil to wilt. Serve hot over your lasagne with a handful of toasted pine nuts; it looks amazing and adds a delicious fresh burst of flavour. I serve it with warmed Woolworths garlic bread on the side.
Spinach-and-ricotta pancake lasagne
It might sound bizarre, but making your own pancakes and using them instead of lasagne sheets lends lasagne a fluffy tenderness. The pancakes really absorb all of those sensational flavours. A great dish to make with the kids, too!
