Ingredients

Method
  • 300 g ground ginger
  • 20 litres cold water
  • 300 g cream of tartar
  • 100 g tartaric acid
  • 2.25 kg brown sugar

1. In a pot, bring the ground ginger and 1.5 litres of water to a boil.

2. Mix the other dry ingredients together in a 20L bucket, then pour the boiling ginger water into the bucket and stir to combine. Top up with the remaining cold water, stir well and leave to brew overnight at room temperature. Serve chilled.

Serving suggestions

• Serve as a welcome drink, or pour into jugs and place around the dinner table for your guests to enjoy.

• For a real South African festive feel, serve with homemade scones and biscuits. This is a love language!

• If you are in your mixologist era, a shot of gin or tequila will result in the perfect cocktail.
