3-ingredient Victoria sponge sandwich



This 3-ingredient Victoria sponge sandwich is a quick and delicious treat, perfect for a fuss-free dessert or afternoon tea. Made with soft Madeira butter cake, fruity jam, and creamy crème fraîche, it comes together in just 5 minutes. Simple, sweet, and satisfying!

- 1 madeira cake, cut into 8 slices
- 2 - 4 T Mixed berry jam, or any jam of your choosing
- 2 - 4 T Creme fraiche or bottled whipped cream
- Icing sugar, optional to dust
Method
Ingredients
1. Add a dollop of jam and a dollop of creme fraiche to four of the madeira cake slices.
2. Top with the remaining four madeira cake slices.
3. Dust with icing sugar, if using, before serving.
Cook’s tip: Swap out the jam for lemon curd, for a citrus twist or Nutella for a chocolate treat.
