Abi’s three-ingredient Valentine’s Day menu

You may not be the best cook, but that doesn’t mean you have to shy away from the kitchen this Valentine’s Day. Abigail Donnelly saves the day with a three-course menu, with each recipe starring just three ingredients

This light and good-for-you menu is easy but luxurious and can be whipped up in no time – perfect for Valentine's Day.

Serves 2

STARTER: CREAMY SWEET POTATO SOUP

1/2 packet diced sweet potato

1 x 400 ml can coconut milk

1/2 packet red curry paste

Place all the ingredients to a pan and simmer for 25 minutes or until the potato is cooked. Add a little water if required. Blitz in a blender.

MAIN: LIGHTLY SMOKED TROUT AND HORSERADISH FENNEL

300 g lightly smoked trout

1 fennel bulb, shaved

4 T creamed horseradish

Place the fish on a baking tray, skin side down, and grill for 5 minutes, taking care not to overcook it as it is already slightly cooked from the smoking process. Mix the fennel and horseradish and serve with the fish.

DESSERT: REALLY EASY CHOCOLATE MOUSSE

100 g dark chocolate, melted

1/2 cup cream

100 g frozen raspberries

Mix the cream into the melted chocolate, place in a blender and blend for 1 minute. Place the raspberries into a bowl and top with the chocolate. Chill or eat straight away.
