Berry tea-infused madeleines

What’s better than warm, fragrant madeleines fresh from the oven? Berry tea-infused madeleines, that’s what.

Start with 1/2 cup melted butter and the contents of two verry berry Higher Living tea bags, plus some dried rose buds (optional) for extra floral flavour. Melt the butter with the tea leaves until golden brown. Set inside to cool and infuse, then strain.

To make the madeleine, whisk 3 free-range eggs until slightly foamy. Slowly add 150 g caster sugar, a little at a time, until a thick paste forms. Fold in 120 g flour, 1.5 t baking powder and 1/4 t salt. Finally, fold in the infused butter. Cool in fridge for an hour. Butter and lightly dust a madeleine tray with flour. Add a tablespoon of batter to every hole. Bake for 10-12 minutes at 180°C until golden & puffed up. Add a squeeze of lemon to 60 g of icing sugar, mix well and drizzle over the madeleines.

Sprinkle with dried rose petals and serve with a steaming cup of Higher Living tea.
