A well-timed tuna mayo sarmie is easily one of the most satisfying simple pleasures you could ask for: some drained tinned tuna, finely chopped onions and a good dollop of mayo sandwiched between two slices of soft buttered bread. Perfection, right? Well, what if we told you that, with a few simple tweaks to the original recipe, you can make take the hero sandwich to super-hero status? Ladies and gentlemen, we present to you: the secret to the tuna mayo sandwich of your dreams.

1. Drain 2 x 170 g cans of light meat tuna chunks, separate into flakes with a fork, then mix well with 3 T thick mayonaisse, 1 T lemon juice, 2 T chopped Italian parsley, 1 T finely chopped onion, 1 T finely chopped celery, 2 crushed garlic cloves and salt and pepper seasoning to taste.

2. Sandwich 3 to 4 T of the mixture between 2 slices of white farm-style loaf. Now, and here comes the kicker, spread some extra mayonnaise on the outside of the sandwich. Yes, you read that right.

3. Slowly pan-fry the sandwich in a non-stick pan on both sides until golden brown, crispy and delicious. Serve with watercress and a packet of your favourite crisps. The mixture is enough for 3 sandwiches, so sharing is an option. (But only if you really want to.)
