Adding Woolworths’ new smooth ricotta to the batter makes for the lightest, most airy pancakes imaginable. Part of Woolworths’ fresh cheese range – which also includes mild and milky fior di latte mozzarella, bite-size bocconcini and traditional ricotta, made the Italian way – Woolworths’ new smooth ricotta has a slightly dry texture, which makes it a great addition to baked goods such as cheesecake and pancakes, not to mention savoury dishes like scrambled eggs and omelettes.

Serving suggestion

Mix 4 free-range egg yolks, ¾ cup buttermilk and 1 t vanilla paste. Fold through 225 g sifted self-raising flour, 1 t salt and 110 g caster sugar. Whisk 4 free-range egg whites until stiff peaks form and fold through the batter with 250 g smooth or traditional ricotta. Heat a lightly greased, non-stick pan over a low heat. Cook 2 T mixture, in batches, for 3–4 minutes on each side or until golden. Drizzle with maple butter and serve with blueberries.
