The next time you’re in the mood for seafood, try some locally sourced hake and kingklip from Woolworths. As part of the Fishing for the Future initiative, both these types of fish are responsibly sourced from a local, sustainable fishery and hand-filleted and portioned for your convenience. With fish of such quality, there’s really very little you need to do with them – fry the kingklip in a knob of butter and add a splash of lemon; poach the hake (recipe below) or roast in the oven until deliciously flaky. Go on, take the bait.

Serving suggestion: Poach 8 x 150 g hake portions with the zest of 1 lemon and 1 t dill for 5–8 minutes, or until just firm. Serve hot with al dente lasagne sheets, baby marrow ribbons, blistered cherry tomatoes and crumbled feta. Season with black pepper.
