Amasi
Amasi, otherwise known as maas or mafi, refers to the popular fermented milk drink in South Africa. It is made by allowing unpasteurised milk to ferment, in a traditional calabash. It can be drunk as is, or used as an accompaniment to dishes such as pap. It’s also commonly used in cooking and can be substituted in any recipe that calls for buttermilk.
