Bouillabaisse

A fish stew made of a variety of fish, flavoured with saffron and tomatoes. It’s traditionally associated with the Provence region of France, particularly Marseilles. There are innumerable recipes for ‘authentic’ bouillabaisse and arguments rage about what are the ‘proper’ ingredients and cooking methods.
