Chapons

Chapons are slices of French bread, including the crust, that are liberally flavoured with fresh garlic, olive oil, vinegar and pepper. They’re then tossed with a salad of mixed greens to add a distinct garlic flavour. They could be described as large, rustic croutons.

Add them, torn, to our spring tuna green salad with garlicky blackened baby pepper, but don’t add garlic to the peppers as you roast them as the garlic flavour will be over too powering in the final dish.
