Doppio zero or 00 flour

00 Flour or ‘doppio zero’ is finely milled white Italian flour. The zeros refer to how finely the grain is milled, so a single zero will be course (like polenta) and a tripple zero really fine (like cornflour).

This Italian wheat flour is great for all of those ciabatta/focaccia recipes you’ve been dreaming of – because it contains less protein, it creates a really nice crust.

It’s also the preferred flour used to make pasta and, kneaded with water, to make pizza bases.

It works in a vaguely similar way to high-quality plain flour, but no two flours will ever bake the same. Find it at Italian delis.
