Yoghurt salads popular in India, raitas are a combination are a combination of thick, whole-milk yoghurt and various chopped vegetables like cucumbers, brinjal, potatoes or spinach. Fruits such as bananas or tomatoes are also added and then seasoned with mustard seeds, garam masala and herbs. Raitas are typically served as condiments designed to be a cooling counterbalance for many spicy dishes.
