How to choose the freshest fish

Not sure you’re selecting the freshest fish? Look out for these four telltale signs, says Woolworths seafood technologist Hezron Joseph

Firmness

Gently press the flesh with your fingertip, it should feel firm and quickly bounce back to its original form. If the flesh remains sunken, give it a wide berth.

The gills

The gills, if still present, should be maroon to bright red. If they’re turning brown or white, steer clear.

Eyes

Eyes should be clear and not sunken. Whole fish that have been frozen and thawed often have cloudy eyes.

Smell

Smell – fresh fish smells like the ocean. If it smells fishy, it’s on its way out.
