Impress your guests with this easy three-course menu

Friends coming over for dinner? Don’t fret. We’ve got the perfect three-course menu that’s quick, easy, and ideal for a warm, summer evening.

Tomato consommé with celery curls & bocconcini mozzarella
Place 500g whole cherry tomatoes, 2 cups (veggie or chicken) stock, and 1 sliced red onion in a saucepan. Bring to a gentle boil and cook for 40 minutes. Drain the consommé through muslin cloth or a dish towel, until a clear broth remains. Place halved exotic tomatoes, celery shavings and torn bocconcini in a bowl. Top with warm consommé.

Barbecue chicken wings
Preheat oven to 200°C. For the marinade combine 2 T brown sugar, ¼ cup lemon juice, 2 T apple cider vinegar, 2 T olive oil, 2 T Worcestershire sauce, 1 t mustard powder, 2 t chilli powder, 2 T paprika, 2 T tomato paste, 1 cup tomato sauce in a bottle and shake well. Pour over the chicken wings and toss until evenly coated. Place the chicken wings on a baking tray and roast in a preheated oven for 40 minutes, or until cooked through and golden. Serve with golden fries.

Appletiser granita
Pour appletiser in a baking tray and place in the freezer. Scrape the mixture with a fork every hour to form soft flakes. Just before serving, fluff up the granita using a fork. Decant into glasses and top with black berries, blueberries, chopped pistachios and sliced Turkish delight.
