Apple-and-cucumber salad with garlic dressing

Ingredients

    For the garlic dressing:

  • 3 T extra virgin olive oil
  • 2 heads garlic, roasted
  • ½ grapefruit (or 1 lemon), juiced
  • salt, to taste
  • 2 Granny Smith apples, thinly sliced
  • 4 baby cucumbers, sliced
  • 4 baby fennel, chopped
  • basil leaves, for serving
  • 1 grapefruit, cut into 8ths, for serving
  • Italian parsley, roughly chopped, for serving
  • 1 t pink peppercorns, crushed, for serving
  • 2 jalapeños, sliced, for serving

Method

1. Blend the dressing ingredients and season.

2. Place the apple, cucumber, fennel, fresh herbs, grapefruit, peppercorns and jalapeños on a platter, drizzle over the dressing and season.
