Corona®-lime cake with lime curd

Ingredients

  • 3 large free-range eggs
  • 200 ml milk
  • 180 ml oil
  • 620 g box Woolworths Easy to Bake Vanilla cake mix
  • 355 ml bottle Corona® Cero
  • 3 T sugar
  • chopped limes, to decorate (optional)
  • icing sugar, for dusting
  • For the lime curd:

  • 2 free-range eggs
  • 100 g sugar
  • ½ cup lime juice
  • 1 lime, zested
  • 60 g butter, cubed

Method

1. Preheat the oven to 170ºC. Prepare the cake according to package instructions and pour the batter into a greased and lined 23 x 13 cm loaf tin. Bake for 45 minutes, or until cooked through. Remove from the oven.

2. While the cake bakes, place the Corona® Cero and sugar in a saucepan and simmer for 10 minutes, or until the sugar has dissolved. Set aside.

3. Poke holes into the cake using a skewer or knife, then pour over the syrup. Leave to cool.

4. To make the lime curd, place the water in a saucepan and bring to a simmer. Using a bowl large enough to fit on top of the saucepan without touching the water, whisk together all the ingredients except the butter.

5. Place the bowl over the water and cook until the curd has thickened, stirring with a spatula. The curd should coat the back of a spoon. Remove from the heat and whisk in the butter. Allow to cool or chill until ready to use.

6. Remove the loaf cake from the tin and top with lime curd. Decorate with chopped lime and dust with icing sugar.
