Easy1. Pour 1⁄3 cup water over a teabag (Earl Grey works well!). Add 1 t maple syrup (or 1 t brown sugar) and allow to steep – you want it to be nice and potent. Chill.
2. In a tumbler or Collins glass with ice, combine the tea with 2 slices fresh lime and a generous squeeze of lime juice, 1 x 200 ml can good-quality ginger ale – or half sparkling water, half ginger ale for a less sweet drink. Garnish with fresh mint and a twist of lime.
