Cheese toasties: 3 ways

For the Caprese toasted cheese sandwich:
1. Spread the basil pesto onto 2 slices of bread, and the sundried tomatoes on the remaining 2 slices.
2. Generously top the pesto with mozzarella, cherry tomatoes and season. Place the sundried tomato-topped bread on top to close the sandwich.
3. Heat the oil and butter in a pan over a medium heat. Add the sandwich and allow to brown for 3 minutes, then turn over and toast the other side for a further 3 minutes, or until the bread is golden and crisp and the cheese has melted. Cover the pan with a lid to help the cheese melt if necessary.
For spicy chicken toasted cheese sandwich:
1. Spread the onion marmalade onto 2 slices of bread. Add the chicken and pickled jalapenos. Sprinkle over the cheese and top with the remaining slices of bread.
2. Heat the oil and butter in a pan over a medium heat then add the sandwiches. Cook for 3 minutes, pressing down gently to get a deeper, golden crust. Turn over and toast the other side for a further 3 minutes, or until the bread is golden and crisp with the cheese melted. Serve immediately.
For the garlic butter toasted cheese with harissa:
1. Spread the harissa onto 2 slices of bread, and top with the pickled onions. Generously sprinkle over the cheese and top with the remaining slices of bread.
2. Heat the oil and butter in a pan over a medium heat, then add the sandwiches. Cook for 3 minutes, or until the sandwich has toasted in the garlic butter. Turn over and cook the other side in the same manner.
Cook’s note: Adding a few tablespoons of water to the pan and covering it with a lid will create steam and melt the cheese perfectly.
