1. In a bowl combine coffee, sugar and boiling water.
2. With an electric whisk, beat until double in size and light caramel in colour.
3. Freeze for a minimum of 6 hours. For a more mouse-like texture, place frozen coffee in the refrigerate for 15 minutes before scooping.
4. Scoop and top with your favourite milk.
