Phyllo egg cups

From Scotch eggs and shakshuka to cloud eggs and soufflé omelettes, showstopping eggy dishes are trending around the world. This World Egg Day, host your own egg-stravaganza at home with Woolies’ eggs.

Preheat the oven to 200°C.

Cut phyllo pastry into squares and line a muffin tin with 3 layers, brushing melted butter between each layer. Crack a jumbo egg into each pastry cup and season.

Bake for 12–15 minutes, or until the egg is cooked to your liking.

Cook’s note:All Woolworths’ eggs are free-range so you can be sure you’re making an ethical choice. Hens are never caged and are free to roam during the day. Plus, there is no fishmeal in their diet or colorants added to their feed, meaning that yolk colours vary naturally. Woolworths is the only retailer that sells no caged eggs.
