Ingredients

  • 2 x 245 g Woolworths red pickled peppers sachets
  • 5 ripe tomatoes, quartered
  • 3 Granny Smith apples, peeled and cored and roughly chopped
  • 8 cloves garlic
  • 8 red chillies, roughly chopped
  • 2 t ground cumin
  • 2 t ground coriander
  • salt, to taste

Cooking Instructions

Blend all the ingredients except the spices and salt in a food processor, then transfer to a saucepan and place over a medium heat. Simmer for 20 minutes, stirring occasionally. Stir in the spices and salt.

Pour the adjika mixture into a 1-litre sterilised jar or 4 smaller jars and seal tightly.

Cook's note: Once opened, store in the fridge.
