Pickled peppers, tomatoes, apples and chillies form the base of this delicious dip. It's inspired by a recipe from Georgia, which is often used to flavour food in the way that pesto is used.

- 2 x 245 g Woolworths red pickled peppers sachets
- 5 ripe tomatoes, quartered
- 3 Granny Smith apples, peeled and cored and roughly chopped
- 8 cloves garlic
- 8 red chillies, roughly chopped
- 2 t ground cumin
- 2 t ground coriander
- salt, to taste

Blend all the ingredients except the spices and salt in a food processor, then transfer to a saucepan and place over a medium heat. Simmer for 20 minutes, stirring occasionally. Stir in the spices and salt.
Pour the adjika mixture into a 1-litre sterilised jar or 4 smaller jars and seal tightly.
Cook's note: Once opened, store in the fridge.
