For the gomashio:
- 35 g sesame seeds, toasted
- 2 t Maldon salt
- 4 large brinjals
- 1 T fine salt
- 4 T maple syrup
- 2 t dried thyme
- 2 t paprika
- 4 T extra virgin olive oil
Method
Ingredients
1. To make the gomashio, place the sesame seeds and salt in a blender and blitz to a rough powder.
2. Slice the brinjals hasselback style, then salt well, making sure to season in the grooves.
3. Whisk the maple syrup, thyme, paprika and olive oil, then pour over the brinjals. Air-fry for 15 minutes at 190°C.
4. Sprinkle the gomashio over the brinjals.
