- 2 ripe tomatoes
- 6 mashed anchovy fillets
- 2 cloves crushed garlic
- 16 pitted black olives
- 1/2 cup chopped basil
- 2 T olive oil
- 500 g cooked gnocchi
- Buffalo mozzarella
Toss ripe tomatoes, cut into bite-sized chunks, with mashed anchovy fillets, cloves crushed garlic, pitted black olives, chopped basil and olive oil.
Stir into cooked gnocchi and arrange on a platter.
Season to taste and serve topped with torn buffalo mozzarella.
