  • 2 cups Self-raising flour (use gluten-free if you want)
  • Pinch salt
  • 1/2 cup Fresh cream
  • 1/2 cup Soda water
  • 1/2 cup Pureed Avocado (I used bought guacamole)
  • 1/2 cup Feta cheese, crumbled
  • 1/4 cup Fresh curly parsley, finely chopped
  • 1 teaspoon Coarse black pepper

Cooking Instructions

Preheat oven to 220 oC. Spoon mixture into muffin pan. Bake for about 17 minutes or till test pick comes out clean. Serve with butter.

Double up ingredients for more.
