- 4 balls Woolworths Madagascan vanilla ice cream
- 2 Free-range egg whites
- 120 g caster sugar
- 1 Woolworths Madeira cake
- Rum or brandy, for serving
Freeze 4 balls of Woolworths Madagascan vanilla ice cream overnight.
Preheat the oven to 200°C. Beat the egg whites until stiff. Gradually beat in the caster sugar.
Cut the Madeira cake in half horizontally, then cut out 4 rounds using a large cookie cutter.
Place a scoop of ice cream on top of each round of cake.
Cover with the meringue and bake for 3–5 minutes or until the meringue is golden. Place an eggshell on the meringue, pour in a little warmed rum or brandy, flambé and pour over the dessert.
