- 8 Mediterranean potatoes, halved
- olive oil, to drizzle
- 200 g shrimps or prawns, chopped
- 1 cup crème fraîche
- juice and zest of 1 lime
- 20 g fresh coriander, chopped
- sea salt and freshly ground black pepper
Preheat the oven to 180ºC.
Place the potato in a baking pan. Drizzle with oil and roast for 25 minutes or until soft and golden brown. Toss in the remaining ingredients. Eat straight away.
Cook’s tip: Replace the halved potatoes with baby potatoes or even sweet potatoes, if you like.
