Ingredients

  • For the fritters
  • 3 ripe bananas
  • 120 g flour
  • 1 t baking powder
  • A pinch salt
  • 60 g brown sugar
  • Vegetable oil, for frying
  • For the apple spice, mix:
  • 2 T ground cinnamon
  • 1 t ground nutmeg
  • 1 t ground cardamom
  • 1⁄2 t ground ginger
  • 1⁄4 t ground allspice
  • 1 T icing sugar

Cooking Instructions

Mash the bananas with a fork.

Sift the flour, baking powder and salt into a bowl. Add the sugar and stir in the mashed banana until a sticky dough forms.

Place the oil over medium heat and, when hot, drop in spoonfuls of dough and fry until golden brown. 4 Remove the fritters from the oil using a slotted spoon and drain on kitchen paper. Roll the fritters in the apple spice mixture before serving.

Cook’s note: Dip the fritters in honey for more sweetness if you like. Apple spice – an American favourite – is made with warming spices such as cinnamon and nutmeg and is as delicious in home-made apple pie as it is with these moreish fritters.
