Ingredients

  • 3 bananas, slightly overripe
  • 200 g brown sugar
  • 150 g butter
  • 2 free-range eggs
  • 240 g cake flour
  • 2 t baking powder
  • 1/4 t salt

Preheat the oven to 180°C.

Using a hand mixer, beat the bananas until smooth. Don’t worry if some lumps are present, this will only make the bread taste better.

Add the brown sugar, butter and eggs to the smoothed banana.

Combine the flour, baking powder and salt in a separate bowl.

Slowly begin adding the dry ingredients to the wet mixture while using the hand mixer on the lowest setting.

Pour the batter into a 23 cm X 13 cm loaf tin.

Bake for 45 - 55 minutes.

Cook’s note: To add some crunch to the recipe incorporate a cup of chopped pecans or walnuts. And for a sweeter dimension stir in a cup of chocolate chips.
