Ingredients

  • For the beef tartare:
  • 40 g cucumber
  • 100 g mixed baby Asian leaves
  • 15 g pickled ginger, finely chopped
  • ¼ red onion, finely chopped
  • 2 spring onions, finely chopped
  • 200 g beef fillet, very finely sliced
  • For the hoisin dressing, whisk together:
  • 2 t hoisin sauce
  • 2 t finely grated ginger
  • 1 t sambal oelek
  • 2 t lemon juice
  • 2 T honey
  • 3 T olive oil
  • For the ponzu mayonnaise, mix:
  • ¾ cups home-made mayonnaise
  • 2 T ponzu sauce
  • 2 t sambal oelek (add more if you want it spicy)

Cooking Instructions

Mix together all the beef tartare ingredients, except for the beef, and dress lightly with the hoisin dressing. Arrange on the plate and scatter with the fillet slices. Drizzle with the ponzu mayonnaise and serve immediately.
