Berry popsicle surprise cocktail

Ingredients

Method
  • For the popsicles:
  • 400 g frozen mixed berries
  • 1 cup orange juice
  • 1 t fresh ginger, grated
  • 4 T caster sugar
  • For the cocktail:
  • 4 oranges, rinsed and sliced
  • 1 cucumber, cut into ribbons
  • 125 g strawberries, halved
  • 3 cups lemonade
  • 1 cup ginger ale
  • 1 1⁄4 cups Pimms No. 1
  • 8 sprigs mint

1. To make the popsicles, blend the berries, juice, ginger and sugar until smooth. Pour into popsicle moulds, insert popsicle sticks and freeze for 4 hours or overnight until solid.

2. Place the oranges, cucumber and strawberries into a jug, then pour over the lemonade, ginger ale and Pimms.

3. Pour the cocktail into glasses filled with ice, then place a popsicle into each glass, add a sprig of mint and serve immediately.
