- For the popsicles:
- 400 g frozen mixed berries
- 1 cup orange juice
- 1 t fresh ginger, grated
- 4 T caster sugar
- For the cocktail:
- 4 oranges, rinsed and sliced
- 1 cucumber, cut into ribbons
- 125 g strawberries, halved
- 3 cups lemonade
- 1 cup ginger ale
- 1 1⁄4 cups Pimms No. 1
- 8 sprigs mint

1. To make the popsicles, blend the berries, juice, ginger and sugar until smooth. Pour into popsicle moulds, insert popsicle sticks and freeze for 4 hours or overnight until solid.
2. Place the oranges, cucumber and strawberries into a jug, then pour over the lemonade, ginger ale and Pimms.
3. Pour the cocktail into glasses filled with ice, then place a popsicle into each glass, add a sprig of mint and serve immediately.
Cook's Note: "After a work trip to London, my husband, Brian, has been really into Pimms, so I came up with this ‘pimped up’ popsicle for him” - Siba Mtongana.
