Sweet meets savoury in this addictive biltong jam. It's the ultimate spread – smear it on toast, add to cheese or charcuterie boards or ditch your usual relish and use this biltong jam on burgers and boerie rolls. It also makes a fantastic home-made gift. This recipe is another reason we think biltong is an underrated ingredient that should be explored beyond snacking.

Ingredients

  • 2 T olive oil
  • 2 red onions, diced
  • 2 cloves garlic, crushed
  • 1 t paprika
  • 150 g Woolworths original Angus beef sliced biltong, roughly chopped
  • 50 g biltong powder
  • ¼ cup water
  • ¼ cup balsamic vinegar
  • ½ cup maple syrup
  • ¼ cup brown sugar
  • sea salt and freshly ground black pepper, to taste

1. Heat the oil in a heavy-based pot over a medium to low heat.

2. Add the onions and garlic and caramelised for 5 – 7 minutes or until soft and translucent. Tip in the paprika and sauté for another minute or two.

3. Add the biltong and powder and stir to combine.

4. Pour in the water, balsamic vinegar, maple syrup and sugar, stir and simmer for 10 – 12 minutes or until reduced to a jam-like consistency. Season to taste

5 Serve as part of a cheese platter with crackers and assorted cheeses, or spoon into a jar and wrap up as a festive gift.
